- Don Julio Blanco & Hot Smoked Barramundi
The tequila: Soft notes of citrus and lime on the nose. Strong agave and citrus on the palate. Being unaged, the agave flavour is very present. Light and sweet to begin with, and a heavier finish with hints of pepper and spices.
The food: A light Demerara and tequila cured hot smoked Barramundi highlights the citrus and agave notes of this unaged tequila. A tomato and crunchy cucumber salsa balances the pepper finish.
- Don Julio Reposado & Blood Orange Crispy Skin Chicken
The tequila: Barrel aged for 8 months in small white American Oak barrels. Soft lemon and agave fruit aromas on the nose followed by a delicate hit of spice. Very soft on the palate with vanilla and cinnamon. Sweet honey and bitter chocolate ending.
The food: A blood orange and tequila glazed crispy skin chicken brings the right amount of sweetness and acidity to reveal the spices of the tequila. The sweetness and chocolate aromas blend perfectly with the roast hazelnuts and tequila spiked Spanish onions.
- Don Julio Añejo & Bitter Chocolate and Coffee Mousse
The tequila: 18 months aged in white American Oak barrels bring a fresh blend of lime, grapefruit and mandarin citrus aromas with a rich touch of caramel on the nose. Full bodied, smooth and complex with hints of cooked agave, wild honey and oak-infused butterscotch. Bright and lightly spiced finish.
The food: Chocolate, coffee and tequila mousse enhance the complex body of this tequila. Pumpkin and lime puree, crispy green banana and oats create the perfect texture and finish with butterscotch oak and honey aromas of the Anejo.
